Granny's Homemade Fruit Pie Recipes


We all love a good fruit pie for the summer (well I know I do). A bit of sugar on top, with a side of ice-cream or custard...mmm delicious. I look up to my granny as she always makes amazing fruit pies/tarts/pastries whatever you like to call it. I love to spend the day baking with her which is so soothing and the bonus is having a tasty pie at the end of a productive day. Here are her recipes for creating a homemade pie that you just couldn't help to not be proud of and dig your spoon into.


Granny's Apple Pie

This pie is pretty simple to make. I know the recipe so well that it's like clockwork when I make it. I like to work in ounces for this recipe as it's easy to remember.

Preparation: 10-15 minutes

Cooking Time: 35-40 minutes

Ingredients

6oz Flour

4oz Margarine/Baking Butter

2oz Sugar (Caster or Brown)

Cup of Milk or Water

2 Large Cooking Apples

Cinnamon (optional)

Sugar (for filling and topping)

Method

1. First, sieve the flour into a bowl and add cut up pieces of margarine. Add the sugar and then work the mixture into your hands, ensuring the margarine is reduced to fine particles, giving a soft sand texture in the end. Preheat the oven to 180 degrees/Gas Mark 4.

2. With your mixture in the bowl, begin to add milk or water in small amounts, mix slowly until you have a non-sticky dough. If you feel that the mixture is too sticky, keep adding flour until it doesn't stick to the bowl or your fingers.

3. Begin to peel then chop the apples into small slices, this will be for the filling.

4. Sprinkle flour on a clean surface and place the mixture on the flour, cut the mixture in half and set one piece aside for later (one for the base and one for the top)

5. Butter your cooking dish (any circular, oven-safe dish will do) using the access margarine on the wrapper. Gently roll the dough to the size of the dish, make it a little bigger to ensure it fits. Add the dough to the dish and make sure it is evenly spread around the entire dish. Pick up the dish, get a knife and cut around the edges, getting rid of the access dough (save for later).

6. Add the apples on top of the dough and evenly spread sugar over all the apples. You can add cinnamon however this is only optional.

7. With your other half of dough, repeat the same process and make sure the dough spreads over the dish well, covering all the apple slices.

8. Use a fork and press the edges of the dough down to seal it and avoid any juices from spilling out in the oven. Add some more holes with the fork on top to allow air to go out. You can make some leaf designs with the access dough or simply cook it on its own next to the pie.

9. Place the dish into the oven. Cook for about 30-35 minutes, the pie should be a nice golden colour when ready.

10. Take the dish out of the oven and let sit for about 10 minutes, sprinkle some sugar on top and serve warm or cold (with some ice-cream or custard is best).

Granny's Rhubarb and Strawberry Pie

This pie has a similar method to the previous however has a more crispy texture due to adding eggs. This pie is sweet and delicious and would definitely impress family and friends.

Preparation: 10-15 minutes

Cooking Time: 35-40 minutes

Ingredients

6oz Flour

4oz Margarine/Baking Butter

2oz Sugar (Caster or Brown)

Cup of Milk or Water

2 Eggs

2 Large Rhubarb

Bunch of Strawberries

Sugar (for filling and topping)

Method

The same method applies to this pie. The only changes are slice the rhubarb and strawberries into small pieces instead of cooking apples. In addition, when you are mixing the flour, margarine and sugar together, add the 2 eggs and mix well. Add the water/milk if the dough is still too dry.
